I have just purchased this service and need to know how to configure my Exchange 2010 server to check the secondary/backup server for mail that may have been recieved during unintended downtime. |

You don't - the service will automatically send on any queued email once your service is restored. There may be a delay of up to 6 hours after your server is restored. |
